Ingredients:

  • 100 gm boiled chicken breasts
  • 150 gm lettuce leaf
  • 1 handful arugula
  • 1 small avocados
  • 100 gm cherry tomatoes
  • 2 tablespoon red onion
  • For Dressing
  • 2 tablespoon oregano
  • 1 teaspoon red wine vinegar
  • 1/2 teaspoon lemon juice
  • 1/2 teaspoon black pepper
  • 2 tablespoon extra virgin olive oil
  • 1/2 tablespoon dijon mustard

Method:

  • To prepare this salad recipe, peel the avocado and cut fine slices of it in a bowl. Next, wash the cherry tomatoes
  • and cut them into halves. Peel and finely chop the red onion in a small bowl. Then, finally cut julienne of boiled
  • chicken. Also, wash the arugula and lettuce leaves, and pat them dry. Keep these salad leaves aside until
  • required. (Note: You can also grill the chicken for better taste using the least oil.)
  • Now, prepare the salad dressing my mixing together red wine vinegar, extra virgin olive oil, oregano, Dijon
  • mustard, black pepper and lemon juice.
  • Once the salad dressing is ready, take a large bowl and throw in the washed arugula and lettuce leaves. Add
  • the finely chopped red onion, chicken julienne along with halved cherry tomatoes and arugula slices in the
  • bowl. Pour the prepared dressing over it and toss well all the ingredients. Once done, serve with a bread of
  • your choice.
